By 1953, Troy Smith, a World War II veteran living in Shawnee, OK, had tried running a restaurant—twice. First there was a tiny eatery known as the Cottage Cafe. With only 12 counter stools and four booths, he could barely make a living for his wife and two children. He sold the little diner, bought a larger place and tried his hand at running a bigger operation. Troy's Panful of Chicken was successful to the point that Smith attempted opening multiple units. However, Oklahomans were not ready for that concept in the early 1950s, and Troy's Panful of Chicken faded quietly into history.

What did not fade from view was Smith's desire to own his own business. His dream was to run a fancy steak house in Shawnee, which he did for awhile. He acquired the steak house on a piece of property which also included a root beer stand. The root beer stand would prove to be a detour in his plan to become a successful restaurateur. Ultimately, he wanted to tear down the root beer stand, and make room for a parking lot for his steak house patrons. But until then, he would make a little pocket change selling hot dogs and root beer to any customer who drove on to the lot. The kink the root beer stand put in his steak house plans was that it was more profitable, it outlasted the restaurant, and proved to be a twist of fate known as the Top Hat Drive-In.

is a local business to business marketer and manufacturer which offers over 7,000 innovative, versatile and durable products for the foodservice industry. Sales for restaurants, hotels, hospitals, and even prisons, are made around the world. A very strong emphasis on employee education is part of the Carlisle program.

Carlisle's efforts to minimize food contamination in the industry, is made manifest in products such their color-coded cutting boards, one for beef, one for chicken, one for vegetables, and Carlisle supplies color-coded cleaning brushes to go with each board. Carlisle's food carts keep food warm longer for use in commercial establishments like hospitals and prisons.

One Carlisle sales rep showed a polycarbonate pitcher to the boss's son and told him polycarbonate was used to manufacture bulletproof glass and was virtually indestructible. The young man was dubious. He dropped it to the floor; no damage done. He kicked it across the room against the far wall, no damage done. "Wow! Let's show this to Dad," he exclaimed.

So they got his father and the son filled the pitcher up with water and led them up to the top of their three story building where he hurled the pitcher as hard as he could at some rocks behind the building.

All the way downstairs the sales rep was saying "Oh My, Oh My," to himself, knowing he had just lost the sale and maybe even the account. But when the pitcher was picked up and examined, all they could find on it was one tiny scratch. That business now uses polycarbonate utensils.

The fact is, you can run over a polycarbonate pitcher with a semi and not break it. It is used in fact, in the manufacture of bullet-proof windshields for presidents and royal families. However, there are certain drawbacks to the material. For example, officials at one prison down in in Australia refused to invest in Carlisle's highly efficient food carts even though prisoners were constantly complaining about cold food.

The prison was a modern prison, with no bars. Instead, it was made entirely out of polycarbonate so that guards could see inside, but prisoners could not get their hands through to do any damage.

Well, inmates finally had enough cold food and the whispered word went around the exercise yard: "Save your butter. Save your butter."

They saved their butter, and saved their butter, and when they had enough butter they smeared it over the polycarbonate walls so the guards could not see into the cells. That was bad enough. When the guards began cleaning off the butter before promising warm food, the prisoners set fire to the butter to permanently smoke the polycarbonate. The end result was that the entire prison melted to the ground.

The prisoners have bars again, but they also have hot food.
